Now this is only my version of the stuffed pumpkin. There are many ways to do this so if you want to add more feel free to look it up!
Instructions
Ingredients
- 1 3-4 pound pumpkin
- 1 pound ground beef
- 1 cup chopped onion
- cooking oil (vegetable oil)
- 1/3 cup chopped red pepper
- 1/2 cup chopped green pepper
- 1 clove of minced garlic (I used pre-cut)
- 1 teaspoon of thyme
- 1 cup tomato sauce
- 2 beaten eggs
Instructions
- Take pumpkin and cut it clean. Keep the stem but put it aside.
- Steam the pumpkin hole first by putting it in 3-4 inches of water on medium heat. Make sure you do it before the water is hot or it'll splash and burn you!!! Steam for 30 minutes.
- Chop up onions and peppers.
- Prepare you slop by putting eggs, garlic, thyme, and tomato sauce together in a medium bowl.
- Brown the meat, while browning add onions, then a few moments later add peppers.
- After meat is browned and onions and peppers are a little cooked put meat, onions, and peppers into slop mix and stir together.
- Coat outside of pumpkin carefully with vegetable oil. I used a napkin so it wouldst drip. It was still slick to put into the oven so be careful!!!
- Put meat slop into pumpkin hole, place pumpkin lid back on.
- Put in a pre-heated oven at 350 degrees for one hour.
We spooned out the contents to eat it. But I believe you are supposed to cut it like a cake and serve it.
